Our Brewing Process

STEP 1 -
All Tun Tavern's handcrafted beers and ales are made with the finest ingredients and contain no artificial additives or preservatives. Tun Tavern ales are generally ready in 10 to 14 days. Lagers are ready in 21 to 24 days.

 

STEP 2 -
The process begins with the brewmaster who selects the finest malted barley and grains to meet Tun Tavern's demanding specifications and standards. First grain is milled to produce grist. This then goes into a mash tun where the grist is mixed with hot water to become a porridge-like mash. The mash is then strained until it becomes a sweet liquid called wort. The wort is then pumped to a brew kettle.

 

STEP 3 -
Here, special hops are added to the wort. The mixture is boiled for approximately one and one half hours. It is then pumped through a heat exchanger and sent to fermentation tanks. The heat exchanger lowers the temperature of the hot wort from 200 degrees to 68/55 degrees.

 

 

STEP 4 -
Cultured yeast is added and the fermentation process begins. During this stage, the active yeast consumes the sugars in the wort and produces carbon dioxide (CO2) and alcohol as by products. After fermentation is complete, the wort is pumped to conditioning tanks for cold storage. In these sealed tanks, the beer is cold filtered to remove the yeast which makes it smoother tasting. Once the brewing process is complete, the brew is ready for customers to enjoy!

Once the wort is sent to the fermentation tanks via the heat exchanger, it is left in the tanks to age for approximately 14 days. Here, the beer is being tested for the original gravity in the fermentation tanks.
